Cinco De Mayo

If you aren't familiar with Cinco De Mayo, you are missing out on a fun chance to have a celebration for your family each year. I grew up in California, where May 5th (Cinco de Mayo) was celebrated in a big way every year. A parade was held in our town along with a carnival, and Mariachi musicians and dancers were on hand to add to the festivities. The best part was all the delicious food! Our town was a Mission town, and the local Catholic ladies society always held an Enchilada fundraiser dinner. I've never had enchiladas as delicious as theirs anywhere else since then. They cooked the beef roast and enchilada gravy from scratch. Yum! I miss those La Fiesta days from my childhood.
